Water is good for heart, kidneys, liver, intestine and skin. If you want to feel healthy you need to drink regularly, not only when you are thirsty.
Mineral water is, gradually, becoming as prestigious as wine. The water sommelier is an increasingly common figure in restaurants and several courses teaching how to start and practice this new profession are being held.
The water list, next to the wine list, is becoming ever more common among the best restaurants in Italy and all over the world.
But what are natural mineral waters?
Natural mineral waters are waters that originate from an underground water source, in some cases, have specific hygienic features and, also, have chemical and/or bacteriological properties that help maintaining excellent health conditions.
Mineral water differs from common drinking water because of its purity and preservation methods, for the minerals , it contains and its positive effects on health.
Natural mineral water must be bottled directly at the source. With the addition of carbon dioxide, it becomes sparkling mineral water. Any further treatments are strictly forbidden.
Nitrates and Pollution
Springing from an uncontaminated soil, Acqua Fillette has a low nitrate level very close to zero.
Normally nitrates occur in minimum, not dangerous amount. However, the wide use of fertilizers in agriculture, high-density livestock, domestic and industrial sewage, can cause nitrates and other nitrogen compounds to penetrate into the ground, with ground water contamination as a result.
High nitrate levels can interfere with the ability of the blood to carry oxygen, being a danger especially for infants.
The total absence of industrial plants, fertilized fields and livestock make of Guarcino an uncontaminated town, with nothing but gushing water.
A study published in 2012 certified the almost total absence of nitrates in Acqua Filette; drinking a water with a nitrate-content of just 0.3 mg/l means drinking an almost pure water.

The benefits of a water with very tiny molecular clusters.
A Japanese study measured the original frequency of the nuclear resonance of the object, which is generally used to measure the size of the molecular cluster. Acqua Filette, with its original frequency of resonance equal to 71 Hz, has extremely small molecular clusters.

Total Dissolved Solids (TDS)
Due to its 209.6 TDS Level Acqua Filette is seen as a low mineral concentration water.
Natural mineral waters are evaluated on the basis of their geological, hydrogeological, organoleptic, physical, hemical and microbiological properties. Italian legislation divides mineral waters into 4 main categories, depending on the amount of Total Dissolved Solids (TDS) they have.
Very low mineral concentration
TDS < 50 mg/l
Among the brands of mineral waters sold in Italy, only 10% have a very low mineral concentration.
The gastric absorption of these waters is very fast allowing them to prevent the formation of kidney stones, thanks to the ability of lowering the production of great crystals, which are responsible for the onset of this disease.
Low mineral concentration
TDS 50 – 500 mg/l
Mineral waters with a low mineral concentration are the most common ones.
Almost half of the brands available on the Italian market belong to this group.
These waters, as well as the waters with a very low mineral concentration (first category), can be consumed in a large amount (up to 2 liters per day). The most important effect of mineral waters with low mineral concentration is helping diuresis and mechanically act on the urinary tract so as to make the expulsion of possible small kidney stones easier.
Intermediate mineral concentration
TDS 500 – 1500 mg/l
Amongst the mineral waters sold in Italy, 25% have an intermediate mineral concentration. Mineral waters containing less than 1000 mg/l of TDS levels have properties which are very similar to the ones of mineral waters with low levels of mineral concentration (second category); on the other hand, waters with more than 1000 mg/l of TDS can cause an excess of sodium.
High mineral concentration
TDS > 1500 mg/l
10% of the Italian mineral waters belong to this category. These waters exceed the content of TDS allowed by law for drinking water, and they are not recommended for daily water consumption.
They are used for therapeutic purposes, because of their high content of sodium, sulfate, potassium, magnesium and other salts.
Mineral water with a high mineral concentration must be drunk under medical supervision to avoid the risk of hypertension and kidney stones.
